Our roots
Pastificio Novella was born in Sori and and we are proud of it.
Our link with the area and our traditions are very important for us, a lot of the cultural activities that we do are based here in Golfo Paradiso and also further afield, for example the “Sagra delle Trofie di Sori”, a Trofie class to teach and inspire our pasta making at events such as SlowFish and Expo 2015.
Hour of work was needed to produce one kilo, so the production capacity based on the skill of the women allowed the pasta factory to serve the shops in the province and to develop up to the need to create a machine.
